The Healthy Brownie Alternative

This week is Halloween and If we are being honest, I love everything about Halloween; except the extreme amount of candy that these kiddos get on their hall. For my sanity, I wanted to create a great dessert recipe that was not full of fake sugar an additives. Being in a house with three kids, I always try to welcome their help in the kitchen.




Things do not always go as planned. I only lost one whisk, but we have a winner! Introducing our


DATE BROWNIES





Ever play with dates? Funny thing to say, but I am serious. Dates are so cool and the more I learn about them, the more I want to work with them. Chewy and Rich without the added sugar! Did I mention they are Vegan !



INGREDIENTS


Brownies:

  • 3 cups raw nuts (walnuts and almonds are a staple for me so I used a mix of the two)

  • 1/2 cup 100% cocoa or cacao powder

  • 1/2 tsp salt

  • 2 cups fresh medjool dates, packed (~25 dates) or dried dates (be careful, the dried ones are sweeter and need a little water to help in the next process)

Chocolate Frosting:

  • 1/3 cup cocoa or cacao powder

  • 1/3 cup maple syrup

  • 1/4 cup melted coconut oil

  • 1/2 tsp vanilla extract

  • 1/4 cup whole wheat flour (added slowly)

INSTRUCTIONS

  1. Brownies: Add nuts, cacao powder, and salt to a food processor. Process until the nuts crumble. Add dates. If you are using fresh, make sure you take out the pits first. If you are using dried, add water or sun butter to your mix. Start with about 1/4 cup or so. Some people say to soak the dried dates, but I just deducted a little of the 3 cups and added the water to the mixer. Process until a sticky dough forms. Line a square baking dish with parchment paper. Use clean hands to firmly press the brownie dough across the base of the dish. NOTE IT WILL STICK TO YOUR HANDS. Set aside while you create the chocolate frosting.

  2. Frosting: Combine cacao powder, maple syrup, melted coconut oil, and vanilla extract in a bowl. Whisk until smooth. After you mix these items, start to add the flour slowly to thicken up the frosting. I started with just about 2-3 tablespoons at a time till got to where I thought was a great consistency.

  3. Assemble: Spread the chocolate frosting in an even layer across the no bake brownies. Place in the refrigerator for at least 1 hour to set. After, slice into 16 squares and enjoy!
